Our birch sap is collected directly from our forests in Ariège and is then packaged in our specialized laboratory to guarantee its quality.

Our organic birch sap, also called birch water, is harvested and packaged in our 16th century farmhouse by our family of three generations of women (Christine the mother, Amandine the daughter and Jade the granddaughter) assisted by Jean Louis.
A part of our birch woods are maintained by our horses for more than 20 years. We respect the forest, the trees and their sap. We manage them as a good father of family. Our production starts around February 25 until April 20.
We are in the heart of the Regional Natural Park of the Ariegean Pyrenees, in the Couserans. Our organic birch sap is harvested in a protected area. Our woods are maintained by our organic Merens horse farm, which also receives a three-week birch sap treatment during the harvest period.
For 20 years, these areas have been classified as organic farming, with respect for nature and the environment.

Our fresh birch sap, harvested from carefully selected trees, is an organic birch sap of great taste and nutritional quality.
After the harvesting of the organic sap, at the end of each cycle, the holes made in the trunks for the collection of fresh sap are systematically filled with wooden dowels.
We guarantee the preservation of the trees and their respect during the collection of our birch water. We only collect what Mother Nature wants to give us.
The amount of water taken from each tree represents only 0.02% of its daily requirement. It regulates its distribution according to its needs. When the first buds appear, the sap no longer flows and the harvesting ends.

How to use birch sap (birch water)?
